Why You Must Make:
- Minimal decorating skills are needed.
- They’re chocolate with a caramel filling!
- Football cookies are perfect for tailgates, game day at home, or to take to a Super Bowl gathering.
Though my cookie decorating skills are limited, I was hoping I could pipe some laces onto football-shaped cookies. With fingers and toes crossed, I began the process, using melted white chocolate to create the lines. Whew. Most looked OK. My family (major football fanatics) was impressed.
Well, until I told them these chocolate football cookies were off-limits until I did a couple of morning spiels for our local Fox and CBS stations. To make them extra tempting, I piped some vanilla buttercream to make a wall around the perimeter of one cookie, filled the well with a spoonful of caramel sauce, then topped with a second cookie garnished with a lace.
Chocolate sugar cookies are nice, but frosting makes them truly memorable! And a dab of caramel never hurts, either! If you need another sweet for your game-day buffet, this Football Bark is super cute!
Time to Move the Tailgate Indoors
With the big NFL finale just around the corner, it’s time to think of what to serve at halftime. Munchies are always in demand and a pot of chili is classic.
In our neck of the woods, grilling isn’t always a viable option, especially when the Big Green Egg is covered with snow or frozen shut. But there are lots of terrific options.
I love to make a dessert, whether M&M cookies with our team colors highlighted or something football shaped like a cheese ball or these chocolate football cookies filled with buttercream and caramel. If you’re still stymied about your menu, don’t worry. I have more suggestions below.
How to Make Sandwich Cookies
- Make your dough, chill if needed, then using cookie cutters, cut and bake an even number of cookies.
- Cool completely on a rack.
- Make your filling, whether a frosting or a thick sauce. If using something like my caramel sauce, plan to make some frosting to create a wall around the edge of the bottom cookie to prevent leakage.
- Spread the filling on one cookie, top with a second cookie, and continue until all cookies are used.
- Decorate the top if desired.
- Store your football cookies in an airtight container.

Yieldvaries
Chocolate sugar cookies with a buttercream and caramel filling! Perfect for game day!
Ingredients
For cookies:
- 2 ½ cups flour
- ½ cup cocoa powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 cup (2 sticks) butter, at room temperature
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla
For laces:
- 3 ounces white chocolate, chopped
- 1 ½ teaspoons vegetable oil
For filling:
- ¼ cup (½ stick) butter, at room temperature
- 1 ½ cups powdered sugar, sifted
- 1 tablespoon of milk
- ½ teaspoon vanilla
- Jarred or homemade caramel sauce
Instructions
- Preheat oven to 350º. Line baking sheets with parchment and set them aside.
- Cream together the butter and sugar till fluffy. Beat in the egg and vanilla until well combined.
- Whisk flour, cocoa powder, baking soda, and salt together and then slowly mix till combined, scraping down the sides of the bowl as needed.
- Lightly dust the work surface with cocoa powder and roll the dough ⅛-¼-inch thick.
- Using a football-shaped cookie cutter, cut shapes, and place them on baking sheets. Bake for 8-10 minutes.
- Let cookies cool for a couple of minutes, then remove to a cooling rack.
- When cookies are cool, sort half of the best-looking cookies to decorate with laces. In a microwave-safe bowl, melt the white chocolate and the vegetable oil, stopping to stir every 30 seconds or so, till the mixture is smooth.
- Place melted white chocolate in a piping bag with the appropriate tip (thin flat opening for the cross lace and a small round opening for the laces) or into a quart Ziploc bag (seal and cut off one corner).
- Pipe the long lace first, then the 3 short laces). Let the chocolate cool and harden.
- Prepare buttercream. You may double or triple if you'd prefer to fill your cookies completely with buttercream. The amount in this recipe is enough to make a wall around the perimeter of each cookie bottom.
- Beat butter and powdered sugar till combined, then add milk and vanilla to thin. May need to add a few more drops of milk to get to your desired consistency.
- Flip the remainder of the cookies so that the bottom side faces up (these are the cookies without laces). Pipe a thick layer around the perimeter of the cookie. Then place a spoonful of caramel sauce in the center of the cookie. Top with one of the laced cookies.
Notes
The amount of cookies from this recipe will vary depending on the size of your cookie cutters.
This cookies can be filled with a simple buttercream frosting for an easier version.
