Little Smokies with Brown Sugar Glaze
Bacon Wrapped Smokies are always one of those favorite appetizers you expect to find at any get-together. But this recipe takes them a step further with the most amazing brown sugar coating. As the sausage and bacon begin to cook, the butter and brown sugar turns into this irresistible sticky glaze that seeps down and coats each one. Trust me, this recipe is guaranteed to be a huge hit!
When planning the menu for party, it’s important to keep things simple. You want an easy appetizer option that is sure to be a crowd pleaser but won’t require you to be stuck in the kitchen away from your guests or the football game! That’s the real beauty about this recipe. You can do the prep in advance by wrapping the sausages ahead of time, even the night before. Then all you have to do is make the glaze, add bake.

- 1 pound of bacon, cut into thirds
- 1 lb little smokies (little sausages)
- 1 stick butter, melted
- 2 cups brown sugar, divided
- Toothpicks
How to Make Smokies with Brown Sugar
- Preheat oven to 375
- Spray a 9×13 baking dish with cooking spray and set aside.
- Cut bacon into thirds and wrap each smokie with a piece of bacon. Secure the end of the bacon piece with a toothpick. Place the smokie in the baking sheet.
- Continue until all your smokies are covered in bacon. Line them in a single layer on the baking sheet.
- In a small sauce pan melt the stick of butter and one cup of brown sugar, stirring frequently. Pour hot brown sugar mixture over the bacon covered smokies.
- Take the remaining cup of brown sugar and sprinkle evenly over the top of the smokies.
- Bake 15-20 minutes and then turn the heat up to 400 and bake for 5 more minutes until the bacon is crispier.The cook time may vary depending on the thickness of the bacon.
- Store leftovers in an airtight container or tightly covered with plastic wrap for up to 3 days.
Keeping the Bacon Smokies Warm
Once you have baked the smokies and the bacon is crisp, you can keep them warm by transferring them to a crock pot. Using kitchen tongs (because the glaze will be hot) place them in your slow cooker, pour the glaze that’s in the bottom of this dish over the smokies and keep on the warm setting. You can also use a chafing dish, but a crock pot does the trick just fine.
Tips for the Best Baked Little Smokies:
- Little smokies usually come vacuum packed in a 14-16 ounce package with a little liquid. In order to get the bacon to adhere to the sausages, you may want to lay them out on a paper towel for a few minutes to help dry them off.
- The brown sugar is the best part of this recipe, but it is also the messiest. To help make clean up a cinch you can line the baking dish with parchment paper before baking. Because this recipe makes extra juice, be sure to use a baking dish and not a lined baking sheet. You wouldn’t want the juice spilling over in the oven.
- The thickness of the bacon can make a big difference in the cooking time. For crispy bacon, you may want to choose a thin cut bacon. I have found that the thinner slices are also easier to wrap around the sausage links.
Variations of this Little Smokies Recipe
There are several versions of this recipe, and they are all delicious. Here are some other great options you can try next time:
- Add even more flavor to by adding a little, maple syrup, mustard, and cayenneto the brown sugar and butter glaze.
- You can easily use sliced smoked sausage instead of little smokies, using the same ingredients and instructions.
- You can never go wrong with BBQ sauce. You can use it as a dipping sauce on the side or add it right over the top of the smokies before baking. These Crockpot Smokies have a great BBQ flavor.
- For a little spice, add a small sprinkle of cayenne pepper to the butter and sugar mixture. Be careful though, a little goes a long way.
